Low Pro Fish Tacos

This is the one taco I've never had the pleasure of trying. Until now. I have been loving the jackfruit tuna salad linked here. So, I added it to tacos and topped with a slaw. Boom. There you have a delicious and easy to prepare meal.

This is a fun meal that makes the whole family happy. I am lucky to live in New England and have access to fresh (and what I hear is delicious) seafood. I threw a frozen pollock from my favorite fishermen who come to my local farm stand in the instant pot. I added a tablespoon of olive oil, cup of water, cumin, salt and pepper and cooked for 9 minutes. It came out flakey and according to my husband was awesome! Fish taco pictured below. He loves flour tortillas so as a treat I used those rather than the boring almond flour tortillas I usually make for him.

It was easy that it did not even feel like I was making two separate dishes. The jackfruit is actually better when it is prepared a day (or two) in advance, which makes this meal even easier to prepare.

Chop the garnishes and put out for your little helpers to top their own (low pro) or (high pro) fish tacos.

My favorite toppings for fish tacos:

cilantro

green onion

flavorful slaw

avocado

spritz of lime

chopped tomatoes

pico de gallo

radishes

zesty sauce of your choice

Zesty sauce is so necessary. I was going to make a homemade adobo sauce but then I saw Trader Joe's jalapeno sauce and decided to make things slightly easier for myself. This sauce is spicy but even my husband loved it with the combination of flavors in his fish tacos.

My favorite flavorful slaw with no prep necessary is Trader Joe's mango jicama slaw. This takes barely any prep from your end. It is also even better when prepared at least a day in advance so it soaks up the flavor.

Fill your favorite low pro taco with jackfruit tuna salad linked here. Garnish with any desired toppings and serve. Fill the high protein option with a white fish. Pollock, tilapia or cod all work well. Scoop into your favorite low pro tacos and add slaw. Then, let everyone in the family top with their favorite garnishes.
