Easter Bunny Pretzel Rods


I love a festive treat that the whole family can enjoy. Actually, this can be enjoyed by anyone and fits the vegan, gluten-free and any version of the low pro diet. It is perfect for holiday treats to prepare for the whole class or stuffed in the Easter baskets.

I love bright colors almost as much as I love good low pro food. This recipe combines the two. Play around with the colors. For best color palate, I recommend using "neon" or pastel food coloring. Have fun with sprinkles and mixing and matching. There is no right way to do this!

The Snyder's of Hanover gluten free pretzel rods taste exactly like traditional pretzel rods but are practically zero phe. I love finding an item (especially when purchased at my local grocery store) that is low in phe. The rods are new to the market so of course I had to try them. If you can't find the rods, this recipe is easily modified to serve with the plain mini pretzels. Dip in the almond bark and pop a traditional ducky peep on top.

Easter Bunny Pretzel Rods

Each bunny rod has 9 mg of phe, 0.4 gm protein, 150 calories

1 bag low protein pretzel rods

1 bag vanilla almond bark

1 container of pastel sprinkles

1 package of peeps

Assortment of food coloring

Microwave 1 cup of almond bark at a time. Add desired food coloring and mix well with a spoon. Dip the pretzels in different colors of almond bark. Add sprinkles or splatter with a different color for contrast. Let these cool on the counter or in refrigerator for about five minutes. Place a small amount of melted almond bark on the back of the peeps and affix to the pretzel rod. Refrigerate for thirty minutes until solid. Enjoy!
