Yogurt Breakfast Bowls

Generally, I struggle with low protein yogurt. I was starting to think I did not like yogurt at all. But alas, Chobani came out with the most awesome coconut milk yogurt. When I saw these at my local grocery store, I grabbed four. Two plain (lightly sweetened), one blueberry and one peach flavored. They are awesome! I liked the plain and peach but have not tried the blueberry yet (I'll keep you updated). I did not see an unsweetened variety. In case you do not see Chobani, my other favorite coconut milk yogurt is So Delicious Greek variety. Stick with unsweetened on that one as the sweetened versions can taste fake.

Now that I have found a yogurt I love, I could finally whip up some delicious yogurt breakfast bowls. These always look so good but I have never enjoyed them as much as I should. The yogurt can truly make it or break it.
A variety of textures and flavors are key to a good yogurt bowl.


The best breakfast bowls have a few essential ingredients:
1. A good base. I love yogurt and also açai (I did a post here on açai bowls).
2. Yummy, fresh fruit. Any and every fruit is acceptable. My favorites are berries but I have used apples, grapes, kiwi, banana- whatever you want!
3. Some sort of tart pop of flavor! I have a few go-to's. My new favorite are freeze dried raspberries. Trader Joe's has a great product. These give a tart crunch.

4. Some sort of crunch. I love granola. My favorite granola recipe is linked here on Cook For Love. I do not usually eat the full granola bar but keep them in my freezer to crunch up over yogurt and açai bowls.
5. Nuts. Obviously that is a no-go for the low protein diet so I substitute with coconut flakes to add the savory flavor that makes this a more complex dish. Generally unsweetened is my favorite for adding a dimension to the dish but all I had on hand today was sweetened.




Remember: With these bowls there is no wrong way to make them. Throw as much or as little toppings you can tolerate phe wise. Get creative and enjoy!
