Arañitas
Arañita translates to "little spider". This is the name given to a Dominican dish of shredded and fried plantain. It turns out like the shoestring potatoes that I am sure all PKU'ers love (salty and fried potato-like flavor... Can't beat it!).
This is a super easy, quick recipe that pleases any crowd. I suggest using a green plantain for the savory flavor and easy shredding. Once shredded, pinch a small amount with your fingers and drop into hot oil. These will fry to perfection in a minute or so. Add a dash of salt and serve hot. No complaints here.
I suggest serving with a garlic or spicy aioli dipping sauce but the kiddos may prefer ketchup.
Arañitas
1. Shred as many plantains as you like with a cheese grater. We used two large plantains for three people. This was the perfect amount for an appetizer.
2. Heat one to two inches of canola or avocado oil. Both of these have a very high burning temperature so good for frying.
3. Test the oil with one piece of shredded plantain. It should bubble and start frying immediately if hot enough.
Exhibit A: This does not look hot enough to cook all the way through.
Exhibit B: Definitely hot enough!
3. Pinch a small amount of shredded plantain with your fingers and drop into the hot oil. Use about two tablespoons per fritter. You do not want to make them too large because you could risk not cooking them evenly.
4. Flip once it appears to brown and remove from the pan when cooked on both sides.
5. Place on plate lined with paper towel to absorb extra oil.
6. Salt immediately. Serve hot.
