Sushi Bowls

I just love veggie bowls with a rice base. My latest obsession are sushi bowls and these are perfect for take out nights because there is no cooking needed to get perfect low pro rice.

I am all about easy and fast meals. Low pro rice in the rice cooker is clutch on nights when you just do not feel like cooking. I double the amount of water to amount of rice. Then turn on and you are home free.

There are so many ways to adapt these yummy bowls. If you are cooking that night, grab some sushi grade fish for those following the high protein diet in the household. You can pair low pro rice with almost any take out dish. Some of my favorites are Indian, Thai and Japanese when I throw together a yummy sushi bowl. Yes you can totally make low pro sushi but this gives you all the same flavor and saves the phe from the nori.

Step-by-step easy-peasy sushi bowls:

1. Order sushi take out.

-->I order the spicy mayo and sweet potato tempura (pick off breading). Our favorite sushi spot also has the most amazing garlic broccoli with chunks of sweet garlic that we split.

2. Cook low pro rice in rice cooker. I have found a 2:1 water to rice ratio works best.

3. Add desired toppings and serve.

So easy. Super low in phe depending on toppings. Best of all, it makes the whole family happy because everyone gets to pick off the menu!
