Low Pro Party Dips

Parties and gatherings are always easier when I host and can prepare foods for myself that match the rest of the group. Thankfully, we hosted the super bowl party. So it was not the outcome we were hoping for here in New England but at least we ate well.

Now you better believe that cauliflower [and chicken] wings made the menu. The main dish was pulled jackfruit and pork sandwiches. However, the heart of any good super bowl party is in the dips.

Dips are a great way to bring a low protein option to any party you attend, especially if you are not hosting and thus have less control over your options. Most are quite rich and filling, which is perfect if other low protein foods are sparse.

Prepping for the party got me thinking about the best party food for those with PKU. It is fun if you can match what the others are eating. Below are my three favorite low protein dips and the modification for the rest of the family or party. I attempt to the best of my ability to pair with veggies and celery. However, nothing beats just a couple of chips paired with a yummy dip.

Buffalo Artichoke Dip

1 can of artichoke hearts coarsely chopped

4 ounces of low protein coconut cream cheese

1/2 cup Frank's Red Hot Sauce

1/2 cup low protein cheese of your choice

2 tablespoons dry ranch dressing mix

Combine well. Heat in microwave. Serve bubbling hot.

White Cheddar Basil Dip

1/2 cup Hellman's Real Mayonnaise (80 mg phe)

**For lower option, 1/2 cup Miracle whip only contains 48 mg phe

1/4 cup of your favorite low protein cheese (I used Cambrooke's white cheddar)

2 cloves minced garlic

2 tablespoons chopped basil

1 tablespoons dry ranch dressing mix (more or less depending on how salty you want it)

Mix together and serve. If you can prepare it one day in advance it is even better!

[Low Pro] Queso Dip

1/2 cup Cambrooke Cheddar Wizard

1/2 cup coconut cream cheese

1/2 cup favorite low pro cheese

1 4.5 ounce can green chilies mild or spicy depending on taste

1/4 cup chopped tomatoes

1/2 tsp garlic powder

1/2 tsp onion powder

Mix together. Microwave and serve bubbling hot.

Now the modifications for the rest of the group...

Blue Cheese Basil Dip

1 cup real mayonnaise

1/2 cup sour cream

1 tsp garlic powder

1 tablespoon chopped fresh basil

4 to 6 ounces of fresh chopped blue cheese (can use crumbled as well but I hear fresh chopped tastes the best)

Mix together. Serve chilled with a colorful veggie platter.

Queso Dip

This is the best full protein queso dip I could find. She has a ton of great recipes and is also a woman in medicine! Gotta support that :-)

Buffalo Chicken Dip (Frank's Red Hot recipe, modified)

1 package (8 ounces) cream cheese, softened

1/2 cup crumbled blue cheese (you could sub ranch dressing if desired)

1/2 cup Frank's Red Hot Sauce

1/2 cup shredded cheddar cheese

2 cups shredded, cooked chicken

Combine well. I suggest serving hot and bubbly in a mini crockpot. Other options are baking at 350 for 20 minutes or microwaving until hot and bubbly.
