Bacon always looks so tempting. The occasional splurge to cook with bacon fat rarely satiates the savory craving.
When I stumbled upon a vegetable marinade to mimic bacon I had to try it. The post was labeled, "How to Make [Almost] Anything Into Vegan Bacon" (link below). They instructed the mixture below. This post suggested using the marinade on any food and said coconut meat held the flavor the best.
1 part smoke (liquid smoke) 3 parts sweet (maple syrup, agave, sugar, brown sugar) 4 parts sour (white vinegar or cider vinegar) 4 parts savory and salty (soy sauce, tamari, liquid aminos)
Sweet potatoes have the same shape as bacon when sliced and I happened to have two sitting around. Perfect. Two sweet potatoes made two cookie sheets of finely sliced "bacon".

I used a tablespoon as my measurement with cider vinegar, agave, and coconut aminos (to save phe). The liquid smoke is strong like the post instructs so tread lightly! I added olive oil and sea salt once on the cookie sheet.


I started with my spiralizer but it gave a circular shape so I went to the mandoline. As I was slicing with the mandoline I was thinking about how I would need to mention how sharp they are and I sliced my finger pad. Awesome. I threw some gauze on and a pressure dressing. Looks okay now...Whoops.


If you happen to plan ahead I would suggest marinating overnight to give more flavor. Other than that, these were awesome! I would suggest not much higher than 350 on convection as they are so thin and are likely to burn quickly (I lost one cookie sheet...again, whoops).

Enjoy with your favorite fruit and low pro bread or good as a side dish for the whole family. Yum, yum!
