The Coffee Station
I was always envious of my latte-drinking, Seattle family members. However, the fad diet movement has propelled us far, my friends. We are lucky to live in a time that we have easy access to authentic, organic, and low protein options for making coffee. I find the healthy fats present in coconut products keep me satisfied much longer than the "coffee mates" I used to cook with. This makes me so, very happy and now I put coconut milk in everything!
It is so fun to have an area in your kitchen as a dedicated coffee station. Overnight guests seem to love it. While I am preparing breakfast, our guests are able to help themselves and some even use the espresso maker. It is so cozy for everyone to gather around the kitchen and lounge in the living room while the scents of breakfast and coffee beans linger in the air.
My favorite coconut milk is the So Delicious as it is available at most grocery stores and is quite low in phe. I tend to mix it with the canned coconut milk or coconut cream found in the Asian food section of the grocery store. The authentic coconut cream or milk that comes in the can has a few more of the healthy fats and I have found it foams better than the So Delicious. However, the So Delicious brand is lower in phe so I use a mix of both. Of note, there is an organic canned coconut milk that I have found locally and prefer to use that rather than this one pictured.
The final product is delicious and warms me right up while giving me that caffeine boost I need! I use two shots of espresso per one cup of coconut milk. Sometimes if I am feeling frisky I will drizzle a little caramel sauce or ice it to mimic my favorite macchiato at Starbucks (iced caramel). Enjoy!
